The delicious taste makes the potato a versatile ingredient in the kitchen. From soups, side dishes, and salads to desserts, the potato can be used in many different ways in the kitchen. Potatoes are also very healthy and easy to digest. They are an excellent source of vitamins and also contain numerous trace elements.
How the potatoes "in Lungauer dialect - Eachtleng" here grow
At the beginning of May, we plant the seed potatoes using a small potato planter. The machine digs a furrow in the prepared field, into which the potatoes should be placed at the appropriate distance, and then the machine covers this trench with soil again. A few weeks later, small shoots grow from the potatoes. Some shoots break through the soil and develop into the potato plants that we see in the fields and gardens. In summer, the potato plant blooms white or purple. Underground, roots and shoots grow from the seed potato. The young tubers grow on them. Each mother tuber produces 10 to 15 new potatoes. In autumn, when the plant wilts, the potatoes can be harvested. We only cultivate a small field, we harvest by hand. It's fun! A machine helps us by carefully digging them up. We then collect the potatoes—if you stay here in autumn you can help us —and sort them later. This means that every potato passes through our hands. The potatoes are then stored in a dark place so that they do not turn green and become inedible.
Favorite recipe: Potatoe goulash
Ingredients for 4 persons:
Heat some oil in a large pan.
Fry 2 medium onions, finely chopped, until golden brown.
Season with 1 teaspoon marjoram, 0.5 teaspoon caraway seeds, and 2 bay leaves.
Add salt and 2 bouillon cubes to taste.
Stir in 1 tablespoon tomato paste.
Put in 2 tablespoon paprika powder (fry only a short time)
then deglaze with a little mild vinegar (just a dash) to preserve the beautiful red color of the paprika powder.
Immediately pour in hot water and finally add 750 g peeled and diced Lungauer Eachtleng potatoes.
Cook until the potato cubes are done, which takes a good half hour.
Serve with sausages and bread rolls if desired.
